Apple Cake




Ingredients:
  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large eggs, beaten
  • 1 cup vegetable oil
  • 2 teaspoons vanilla
  • 3 cups finely chopped apples
  • 1/2 cup apple juice
  • 1 cup chopped walnuts
  • Glaze topping for cake
  • 1 cup brown sugar
  • 1/4 cup butter
  • 1/3 cup whipping cream



Directions:

  1. In a large bowl combine flour, sugar, soda and salt. Make a well in the center and set aside.
  2. In a medium bowl combine eggs, oil, apple juice and vanilla. Stir in apples and nuts. Add the egg mixture to dry ingredients, just until moistened.
  3. Spread batter in a greased and floured 9 x 13-inch pan. Bake at 350°F for 45-50 minutes
  4. In a small saucepan combine the brown sugar, butter and cream.
  5. Cook and stir till bubbly and all of the sugar is dissolved. Cool slightly. Drizzle warm sauce over cake, when it has cooled for 5 minutes, so it can seep into the cake, keeping it moist.

Caramel Apple Cake



Ingredients:
  • 1 1/4 cups brown sugar
  • 3/4 cup sugar
  • 6 tablespoons butter, softened
  • 2 eggs
  • 2 cups flour
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoons baking soda
  • 2 golden delicious apples
  • 2 granny smith apples
  • 4 tablespoons butter
  • 1/2 cup brown sugar
  • 1/2 cup whipping cream
  • 1/2 cup sugar



Directions:

  1. Mix sugar, melted butter and eggs together.
  2. Add remaining dry ingredients (will be thick, like cookie dough).
  3. Peel and chop apples.
  4. Add chopped apples to batter, mix well.
  5. Spread into greased 9x13 pan.
  6. Bake at 350 for 30 - 40 minutes.
  7. Shortly before the cake is done baking add the remaining 3 Tbs butter, sugars and whipping cream to sauce pan on medium heat.
  8. Sir frequently until slightly thick.
  9. Pour sauce over warm cake.
  10. Serve warm.

Low Fat Apple and Oatmeal Muffins



Ingredients:
  • 1 1/2 cups quick oats
  • 1 1/2 cups apple juice
  • 2 teaspoons vanilla extract
  • 1 1/2 cups whole wheat flour (or spelt flour)
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 2 medium apples, grated
  • 1 teaspoon cinnamon
  • 4 egg whites, beaten to soft peaks
  • apple, wedges to garnish (with or without peel)



Directions:

  1. Soak the oats, apple juice, sugar and vanilla for 30 minutes.
  2. Mix in the flour, baking powder, grated apple and cinnamon.
  3. Fold in the beaten egg whites; Spoon into 12 muffin tins.
  4. Top muffins with 2 sliced apple wedges (cut quarters of apple into 3 or 4 wedges) and bake at 170° C (338°F) for 25 - 30 minutes until muffins and cooked though and golden.
  5. Cool in pan for a few minutes, then remove from pan and cool on wire rack.
